The trademark "Hi, may I help you?" rings out loud and clear before a customer is even through the door. It's off-putting to some, but just get with the program--check the menu board, let someone behind you go on ahead, make your decision, and give your order when you're ready. After that, watch the well-oiled machine as the staff banters back and forth to get your order just right. Ollie Gates has been in the pit biz for more than 50 years. He's got the routine down pat. To assure that his staff does it his way, they attend Rib Tech College of Barbecue Knowledge. This is really a family affair with Gates' father's original sauce featured and four of Ollie's children helping to oversee the operation. Check out those plump beef sandwiches and platters of ribs, and save room for a little sweet potato pie.
